Tilda Basmati Rice is known the world over as the prine
of rice. It has travelled all the way from the foothills of the Himalayas
in Northern India, where the ideal growing conditions provide Basmati
with its exquisitely unique flavour and aroma. (The word Basmati means
"the fragrant one"). During cooking each grain elongates to
nearly three times its original size. So elegant, delicious, and separate
are the grains that Tilda Basmati can be enjoyed without the addition
of salt, butter or oil.
Spiced Broccoli and Green Bean Pilaf
In a large deep skillet, sautee 1 onion chopped, 2 cloves garlic crushed
in 3 tblsp oil until lightly browned. Add 1/4lb fresh green beans chopped,
1/2 lb trimmed broccoli florets. Cook for 2 minutes and stir in 2 tsp
mild curry powder, 3 whole cloves and 1 small cinamon stick. Cook for
1 minute then stir in 1 cup of rinsed Basmati rice. Cook for 2 minutes,
stir occasionally then pour in 2 cups (chicken or beef) bouillon or water.
Salt and pepper to taste. Bring to a boil, stir; cover and simmer gently
for 10 minutes. Let stand stir, remove cloves and cinammon sticks. Serves
4.
